 Scope Of Position:
Principal Scientist to lead the Italian meats development platform for the JBS Prepared foods team. Development work will include, but not limited to, formulation, processing, specifications, equipment scoping, design guidance, and validation study completion. Additional project work could include plant efficiency improvements, cost optimization, and innovation development in the prepared meats category.  The primary focus of this role will be to create, test, and commercialize salami, pepperoni, and prosciutto skus for the JBS portfolio.
 
ESSENTIAL DUTIES AND RESPONSIBILITIES include the following: other duties may be assigned 
  • Executes small-scale and large-scale plant tests  
  • Creates and manages product specifications and BOM reviews 
  • Maintains accurate and complete records, analyzes reports 
  • Utilizes a working knowledge of plant processes and facilities 
  • Provides onsite monitoring and technical assistance to operations when testing/manufacturing new products.  
  • Leads commercialization of product changes and implementation of new items and processes. Ownership of data, specification and SOP’s (standard operating procedures) is mandatory.  
  • Works with cross-functional team members to flawless implement new formulations, manufacturing processes and commissioning new equipment and manufacturing lines 
  • Identify and lead projects to drive revenue and margin growth for the organization 
  • Conduit between JBS and the meat industry as it relates to technology, policy guidance, food safety advancement, and regulations
Capabilities/Qualifications: 
  • Demonstrated technical competence – Meat Science, Food Safety, Food Science, Food processing/manufacturing  
  • Pro-active self-starter, willing to accept responsibility for completion of business tasks. Must be a driven individual that can take ownership of projects and complete all the relevant R&D tasks required for the job with minimal oversight. 
  • Ability to interact with others in manufacturing, lab and office environment
  • Excellent collaboration, creative problem-solving skills and organizational skills
  • Ability to multitask and prioritize
  • Must be able to work closely with many departments including Sales, Regulatory, R&D, Quality, Marketing, Purchasing, and Production.
  • Must be able to work in a food manufacturing environment and be able to flawlessly transition products and processes from R&D to operations
  • Clear, concise written and oral communication skills required with attention to detail and accuracy mandatory
  • Computer skills that include Word, Excel, PowerPoint 
Experience/Work History:
  • Reliable work history, punctuality, and dependability
  • Bachelor’s degree in meat science/food science or equivalent with 5-10 years of industry experience or Graduate degree with 3-8 years of experience. Or significant relevant industry experience. Any operations experience will be a plus and considered in conjunction with R&D experience.
  • 3-5 years of fermented/dry-sausage experience is preferred
  • Extensive background in food product development 
Supervisory Responsibilities:
  • None at this time.
Travel: 
20% to manufacturing plants, industry trade shows, equipment vendors, etc.
