Job Summary: Supervises assigned kitchen staff with certain food preparation responsibilities, food planning, expediting, quality control, cleaning, and maintenance of kitchen, providing supportive leadership and maintaining the highest possible food standards set by Odawa Casino Resort.

 

Primary Duties & Responsibilities:

 

  • Makes recommendations to hire, terminate, promote, demote, transfer, provide training opportunities, recommends merit increases, evaluates performance, completes all written documentation regarding Annual Evaluations, creates and adjusts performance standards, provide for the fair and equitable treatment of all Team Members.
  • Monitors kitchen activities, expedites orders to ensure quality taste or presentation.
  • Ensures kitchen staff has proper direction and adheres to set policies, standards, department rules and sanitation requirements.
  • Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance.
  • Ensures that the kitchen operates in a timely way that meets our quality standards.
  • Demonstrate skill at all stations and with all kitchen equipment: broiler, sauté, fryers, pantry, etc., to effectively supervise and teach those stations.
  • Keeping the workstation and kitchen equipment clean, organized, and sanitized.
  • Comply with sanitation regulations and safety standards.
  • Trains new Team Members.
  • Provides meal quality and consistency by following designated recipes.
  • Write, test, and submit recipes and menu ideas to the Executive Chef.
  • Submit work orders for equipment repairs.
  • Recommend equipment and small ware purchases.
  • Coordinate food preparation for on-site and off-site catered events.
  • Assist in menu planning and preparation of specialty meals according to BEOs and standardized recipes and menus.
  • Responsible for scheduling kitchen staff and providing input in the evaluation of their performance.
  • Provide all kitchen staff with the necessary tools and equipment for safe food handling.
  • Assist in the oversight of kitchen staff and in daily operations of the kitchen.
  • Recommends process and customer service improvements.
  • Foster a culture of learning and development; support individual growth through continuous feedback to achieve personal and professional goals.
  • Conduct oneself in a positive and professional manner, acting as a role model for all Team Members.
  • Exhibits Leadership skills through the continuous evaluation, guidance, and encouragement of Team Members.
  • Maintain knowledge of all current and upcoming promotions and events at Odawa Casino Resort.
  • Maintain a positive and professional approach with Team Members and guests.
  • Attend all meetings as required.
  • Complete all required training satisfactorily.
  • Always maintain the highest level of confidentiality.
  • Work at other properties as needed.
  • Perform in assigned areas as dictated by business levels and directed by management.
  • Perform all other duties as assigned within the scope of the position.

Minimum Qualifications:

 

  • Must read, write, and speak English fluently.
  • Must have one (1) year of kitchen management experience and five (5) years of cooking, or an equivalent combination of education and experience.
  • Must be ServSafe certified within ninety (90) days of hire.
  • Must be knowledgeable with food safety and sanitation regulations.
  • This position requires the ability to stand for extended periods, bend, stoop, reach, push/pull equipment, lift and carry weights up to seventy-five (75) pounds.
  • Possess a thorough knowledge of food safety & sanitation, culinary nutrition, and supervisory management.
  • Must be able to demonstrate new cooking techniques, recipes, and equipment to kitchen staff.
  • Must be flexible with shifts and days off with the ability to work overtime, weekends, holidays, and special events, etc., as needed.
  • Exposure to loud and continual noise levels and a smoke-filled environment.
  • You may be required to pass a skills assessment test to determine if you meet the minimum qualifications of the position.
  • Must be able to obtain a gaming license in accordance with the regulations established by the LTBB Gaming Regulatory Commission and be able to serve in the position under any other applicable law.
