Job Summary:

The role of Beer Brewer encompasses being highly involved in the creation of new and unique beers, overseeing various stages of the brewing process, and maintaining a hands-on approach to brewing. The focus is on producing original, flavorful beers and often engage in all aspects from product development to customer interaction.  Performs all day-to-day brewing operations ‘under direction and supervision of the Director of F&B.

 

Primary Duties and Responsibilities:

 

  • The complete brewing process from milling, mashing, lautering, boiling and fermenting.
  • Monitor fermentation progress and make necessary adjustments to ensure optimal quality.
  • Monitor and adjust temperature and humidity levels during fermentation.
  • Accurately measure ingredients and correctly operate brewing equipment.
  • Operate and maintain brewing equipment, including tanks, pumps, filters, and hoses.
  • Clean and sanitize tanks to ensure bacteria does not contaminate the batches, clean the outsides of the vessels, clean floors, and maintain the appearance of the brew room. 
  • Close adherence to all SOPs and safety procedures, as provided.
  • Conduct quality control tests to ensure consistency and adherence to standards.
  • Accurately complete all checklists.
  • Maintain high standards of cleanliness and hygiene throughout the brewing process.
  • Ensure all health/safety regulations and recipes, quality of water used in brewing, and quality when inspecting raw materials and finished products.
  • Ensure a safe work environment and a culture that embraces safe work habits, understanding of the risks, compliance with regulations, and following corrective action plans for any identified safety hazards and risks as directed by brewery management.
  • Perform and troubleshoot all functions of the brewery and cellar per standard operating procedures, including but not limited to, raw ingredient handling, wort production, yeast management, dry-hopping, barrel handling, clarification, clean-in-place systems, quality assurance, record keeping, and general cleaning.
  • Maintain equipment and operating systems to ensure proper working conditions and perform preventative maintenance as directed.
  • Communicates any known mechanical, raw material, and/or beer quality issues to Director of F&B.
  • Follow corrective action plans as needed to ensure all core brands match the established quality standards as directed.
  • Report, evaluate and interpret wort and beer quality daily, including analytical results, process consistency, and taste based on training and guidance from the Director of F&B. Implement changes to improve processes, recipes, beer flavor and consistency as directed.

  • Adhere to Federal, State and LTBB Regulations
  • Transfer the beer to barrels or kegs for storage or distribution.
  • Fill bottles or cans with beer ready for sale.
  • Keep track of inventory levels, schedules, deliveries, and other details associated with the brewery.
  • Ensure all tasks are completed in a timely manner.
  • Assist with managing finances (budget).
  • Staying up to date with new technologies and developments within the beer industry is essential, attending relevant conferences/seminars when possible.
  • Interacts with Team Members, vendors, guests, and others.
  • Greet all guests and Team Members in a friendly, open manner.
  • Conduct oneself in a positive and professional manner, acting as a role model for all Team Members.
  • Maintain knowledge of all current and upcoming promotions and events at Odawa Casino Resort.
  • Attend all meetings as required.
  • Complete all required training satisfactorily.
  • Maintain the highest level of confidentiality.
  • Work at other properties as needed.
  • Perform all other duties as assigned within the scope of the position.

Minimum Qualifications

 

  • Proven experience in the brewing industry with very high-level brewing skills.
  • Preferred- Certificate or degree in Fermentation Science/Brewer’s Science from an accredited institution. National Institute for Beer Excellence (NIBE) qualifications can also be helpful.
  • Preferred- Completion of formal training programs such as cicerone certification or advanced home brewing course.
  • Preferred experience with brewery equipment maintenance and developing new beers.
  • Must have knowledge and understanding of raw material selection and usage for different beer styles.
  • Ability to operate complex brewing equipment, including brewhouse systems, yeast handling, hop addition systems, milling equipment, tank filling/emptying operations and packaging lines.
  • Innovative, creative, and motivated to create some new and delicious beers.
  • Has a passion for beer making.
  • Must have a working knowledge of OSHA requirements.
  • Basic chemical hygiene and chemical handling.
  • Quality assurance skills and drive for continual improvement within a brewery setting.
  • Excellent verbal and written communication skills.
  • Problem solving skills.
  • Physical ability to crouch, stand, or climb rapidly and continuously throughout an 8–10 hour brewing shift, work in potentially confined spaces, carry materials, and lift heavy objects such as bags or barrels of beer.
  • Must read, write, and speak English fluently.
  • Must be flexible with shift and days off with ability to work overtime, weekends, holidays, special events, etc., as needed.
  • You may be required to pass a skills assessment test to determine if you meet the minimum qualifications of the position.
  • Exposure to loud and continual noise levels and a smoke-filled environment.
  • Must be able to obtain a gaming license in accordance with the regulations established by the LTBB Gaming Regulatory Commission and be able to serve in the position under any other applicable law.
