Sr. Project Specialist/Bakery Applications

Miracapo Pizza Company is the leading North American manufacturer of specialty frozen pizzas for some of the world’s largest retail, foodservice, and consumer branded companies. For over 30 years we have specialized in contract manufacturing, private label, and brand development.

Key contributor and thought leader driving next generation product development focused on bakery innovation.  This internally and externally facing role will develop new products with a focus on dough development and ingredient applications.  In addition will be a strong, internal support to procurement team as relates to alternate ingredient sources.  A person with expertise in bakery applications will be tasked with educating internal partners.  This role requires natural curiosity about this dynamic and everchanging category, research is required.

Key Responsibility Areas:
  • External Partnerships/Customer Requested Development
  • Establish comprehensive development criteria by fully understanding project objective and requirements. Criteria may come from Project Scope, Team Strategy Meeting, and/or direct contact with Account Manager or Customer.
  • Work with internal and external partners driving development project forward
  • Participate in or support customer product presentations and internal cuttings
  • Research
    • Ongoing research on dough ingredients including but not limited to grains, pulses, starches gums, proteins, fibers, and fermented processes.
    • Knowledge of Gluten free, Organic, Vegan certifications necessary
    • Hands on benchtop application work on potential ingredients developing formulas for future use in product development:
      • Assess mixing and handling potential in manufacturing bakeries
      • Assess how formulas will bake
      • Assess freezing and long-term stability
    • Make comparisons between current and competitive products identifying area of business potential.
    • Participate in marketing activities such as researching market trends as they pertain to strategic business plan and new products.
    • Organized documentation that serves as a reference and educational tool internally
  • Internal Partnerships
  • Level up internal partner knowledge by sharing research and information, cadence to be determined.
  • Real time troubleshooting and ingredient recommendations as needed by operations or procurement on current formula array
  • Participate in and lead product improvement initiatives to improve the quality of existing products in response to customer feedback, to improve nutritional value, color, flavor, and texture.
  • Participate in sourcing of new and innovative raw materials for bench-top samples and initial plant runs.
  • Team Leadership
    • Lead and educate MPC Bakery Applications.
    • Level up knowledge broadly at MPC in this space including specifications and documentation
    • Coordinate and supervise full scale production testing to validate new and revised formulations, production parameters and ensure all details are captured throughout the testing process.
    • Understanding of cost as relates to finished product and working within cost target
    • Ownership of manufacturability of ingredient selection and potential associated costs such as waste, impact on run rate or new equipment
