From casual comforting cuisine to upscale Alpine inspired dining, The Arrabelle at Vail Square offers a variety of dining options to please every palette. The Arrabelle at Vail Square is currently looking for a Full Time Year Round Sous Chef to assist in the operation of all of the Arrabelle's culinary outlets including The Tavern on the Square, our lively restaurant that features mouthwatering breakfasts, desserts and everything in between. The Arrabelle Culinary Department is also responsible for In Room Dining, Employee Dining and catering to our robust banquet department which plays host to numerous weddings, corporate events and other special occasions.

 

The Culinary Sous Chef is responsible for ensuring that all Resort guests have the highest quality culinary experience possible while maintaining a profitable Food & Beverage Division.  A Sous Chef oversees all aspects of the culinary operations that include; Tavern on the Square, banquets, in-room dining, pastry, garde manger, special events and employee meals.  A Sous Chef oversees the Stewarding department and they are responsible for maintaing all health department stands, brand standards and safety standards. They will manage financial expectations of the Resort through implementation of labor and cost controls on a daily basis.       

 

Sous Chef is capable of motivating a team to meet the department and resorts goals.  Exhibits a professional demeanor through appearance and by maintaining a positive attitude toward all co-workers, managers and guests.  Capable of working as a part of a cohesive culinary/kitchen team.   Adheres to all five star/diamond brand standards to ensure that all guests have an outstanding culinary experience.

 

Sous Chef is a manager in a high end-fast paced culinary environment.  They will prepare food according to standardized recipes and portion controls.  They will assist in prepping all kitchen lines and re-stocking the lines, as necessary.  Help to receive food and dry goods for the kitchen and properly account for such deliveries.  Keep all coolers and walk-ins neat and clean.  Properly store/cover all food items and rotate products for freshness.  Helps the Chef maintain all par levels for the kitchen(s).

 

Qualifications:

  • High School diploma or equivalent. -required 
  • Current certification in state Professional Food Handler Program. -required  
  • Previous culinary experience. -required 
  • Four years of culinary experience as a Line Cook in an upscale, high volume hotel/resort or restaurant. -required 
  • Prior managment/supervisory experience. -required
  • Must be able to communicate effectively in English both written and verbal. -required  
  • Must be able to lift 50 lbs. -required
  • Must be willing to work weekends and holidays. -required
  • Culinary degree/certificate. -preferred
  • Computer proficiency. -preferred
  • Prior experience using word, outlook and excel. -preferred
  • Ability to communicate in Spanish. -preferred
