The Food & Beverage Manager is responsible for maintaining/ improving quality of dining experience for upscale themed hotel restaurant, In Room dining facilities and banquet / group functions.  Financial responsibilities include payroll, monthly inventory, and adhering to budgets. Enforcement of grooming and service standards.  Candidate responsible for maintaining a safe work environment for employees and to act on and follow up on all safety and work comp incidents. Ensure all RockResorts standards are upheld while providing an extraordinary dining experience on a daily basis. Candidate is responsible for ongoing training of company Brand Standards.  Candidate is  expected to work a minimum of 50 hrs/ wk. Job responsibilities include, but are not limited to:

  • Responsible for the guest satisfaction, upholding standards, and financial performance of the Living Room, In-room Dining, and banquet functions  at One Ski Hill Place, A RockResort
  • Responsible for scheduling, hiring, discipline of all food and beverage areas for OSHP Hospitality
  • Operate facilities at proper staffing levels for all seasons
  • Responsible for timely Payroll exceptions, approvals, and labor distribution reports
  • Ordering and inventory control of Restaurant food and beverage as applicable
  • Make sure facilities and employees have necessary tools and equipment to effectively do their jobs
  •   Ensure that operation fully supports initiatives with corporate  strategic partners by giving outstanding representation to their product
  • Maintain and continue to develop an amicable working relationship with the Mtn. Food and Dining team.
  • Financial Responsibility: develop, implement, and manage controls for Labor, Cost of Sales, and operational expenses to attain budgeted figures or below while maintaining quality standards.  Participate in forecasting and budgeting.  Review, analyze, and explain Profit & Loss statements.  Perform billing and payroll, in a timely & accurate manner, including calculation of gratuity dist
  • Human Resource Responsibility: recruit, hire, train, develop, appraise, and discipline staff following corporate procedures.  Post any jobs using requisitions.  Hold monthly staff meetings and training for the proper techniques and etiquette. Monitor staff performance through coaching, counseling, and progressive discipline.  Define performance standards.
  • Product Management: effectively inventory, purchase, and manage all necessary resources to maintain and/or improve quality standards.  Hold staff accountable to standards including TIPS alcohol procedures.  Complete knowledge of F &B operations including bar service.  Accountable for daily operation, production and security of facility, equipment, and company assets.
  • Leadership Responsibility: lead by example.  Participative management style with hands-on work ethic.  Form cohesive team encompassing all staff members.  Daily supervision of all staff members.  Verbally communicate, in a calm, positive demeanor, during the course of all functions with the kitchen, service, beverage, conventions services, and engineering staffs, as well as the guest
  • Provide and maintain safe and sanitary work environment
  • Adhere to Vail Resorts code of ethics at all times
  • Routinely Check product sales mix  and compare with menu engineering worksheets to improve menu selection and profitability
  • Maintain a professional and approachable demeanor with all internal and external guests.
  • Complete a timely and accurate monthly inventory on all alcohol item

 

Job Requirements:

  • High School Diploma or Equivalent
  • Minimum 6 years Food and beverage experience
  • Minimum 4 years supervisory experience
  • Colorado driver's license
  • Purchasing software experience, MS office suit
  • English Fluency
  • TIPS certification required within 30 days of employment, ServSafe w/in 3 months

 

Preferred Skills:

  • BS Degree is perferrred. A combination of practical experience and education will be considered as an alternate.
