Talons Restaurant, Beaver Creek’s new on mountain restaurant, is situated at the base of Larkspur Bowl, Grouse Mountain and Birds of Prey. The restaurant also serves as the press center and athlete lounge for the Birds of Prey World Cup and the 2015 FIS Alpine Ski World Championships.

 

The European-inspired menu, made from our scratch kitchen, features gourmet dining options such as the Talons Kasseler Rippchen Casserole, Colorado Lamb Burger and tossed to order salads, homemade soups, carved meats, rustic thin pizzas and artisan breads served in an upscale cafeteria setting. 

 

 

The Executive Chef will manage all aspects of the kitchen under the supervision of the General Manager and will assure maximum guest satisfaction through the smooth and efficient operation of the kitchen and associated duties.

 

  • Prepare, produce, and present outstanding quality cuisine in a timely manner through effective management of staff and kitchen operations. 
  • Partner with General Manager to manage all aspects of Food & Beverage for 2015 World Championship Ski Races, World Cup Ski Races, Talon’s Challenge & Summer Events
  • Develop, manage and communicate all menus to staff, other pertinent departments and marketing/advertising staff. Ensure maximum guest satisfaction in food quality and expedite special requests.
  • Coordinate ordering and availability of product, supplies and equipment with warehouse clerk, sous chef, supervisors and managers utilizing Vail Resorts preferred vendors for the maintenance of budgeted cost of sales guidelines.
  • Perform daily and monthly inventory of all product with a concentration on food.
  • Perform costing and control for all menu items.
  • Ensure kitchen safety and sanitation through supervision of food preparation/production, proper condition/cleanliness of kitchen equipment, use of cleaning chemicals and maintenance of   MSDS book.
  • Achieve and maintain proper and budgeted staffing levels through effective hiring and scheduling of staff.  Establish and maintain a successful and positive working environment through proper training, discipline and support of all kitchen staff. 
  •  Supervise and evaluate staff to ensure employee performance guidelines are met.
  • Extensive and creative menu development while maintaining signature items.
  • Lead by example.  This position will require frequent training/cooking on the line with staff.
  • Be open and responsive to guest menu requests and create a positive culture within the operation to embrace this philosophy.
  • Be outgoing and willing to go in to the dining room to talk with members and guests and to make appearances at local food festivals and on TV8. 
  • Must be able to interview, hire, coach and train staff and complete all their paperwork including reviews and terminations
  • Prompt and accurate keeping of log books are required
  • Must be able to prepare written, detailed station assignments for all stations in the kitchen and set the expectation for each staff member
  • Executive Chef at Talons must be flexible in their work schedule as well as location of venue

 

Qualifications:

  • 10 or more years of culinary experience - required
  • 5 or more years supervising large staff - required
  • Serv Safe certified - required
  • Valid driver's license - required
  • High volume dining and event experience - preferred
  • Proficient in MS Office - required
  • Past use of computerized purchasing system - preferred
