Position Summary
Responsible within the Product Development team for developing on-brand food products and recipes tailored to meet our business needs. Ideates and creates new products, maintain and reformulates existing products. Focus on quality, cost, and the high standard of food and safety with each product. Demonstrates good knowledge of ingredients and nutritional value meeting our quality standards. Projects may involve routine development of dishes from conception thru scale up. Responsible for conducting recipe testing, new item development, and documentation to meet company goals and client expectations. Ensure maximum efficiency while maintaining the highest standards of ingredient integrity, company standards, and specifications.

Major Duties and Responsibilities

To ensure that the PreK-12 school business receives the anticipated annual innovations & quarterly menu enhancements. Utilize the annual PreK-12 meal innovation calendar as a tool to direct the work stream. Proactively ensure that quarterly & annual meal developments proceed according to timeline; working from concept to formulation while supporting scale-up and launch of healthy food choices. Follows all health and safety standards, GMP’s, food safety, visual quality, and PPE requirements. Sets priorities and gives direction based upon goals and meets KPI targets for the department.Takes the lead providing culinary guidance to ensure proper Product Development for the delivery of foods for schools from concept thru commercialization. This will include formulation, reformulation, translating PD recipes into SOPs, setting up procedures and guidelines for scale-up and mass production efficiencies.

  • Responsible for the designing, testing, scale-up, and overall development of recipes for commercialization in adult and senior markets.
  • Create new recipes and define taste profiles through experimentation.
  • Ensure maximum efficiency while maintaining the highest company standards and specifications.
  • Prioritizes and works in a timely fashion while balancing multiple projects simultaneously.
  • Refine recipe formulation for mass production purposes, while maintaining a gold standard.
  • Develop product improvements based on sensory testing, shelf-life testing, and consumer data.
  • Conduct cuttings and sensory testing on new and existing products that need reformulation.
  • Maintain records of research and development activities, including but not limited to accurate recipe formulations, procedures, temping yield data, and production notes.
  • Collaborate with operational personnel to maximum handover and transition efficiency.
  • Provide direct supervision, development, guidance, and coaching to team members. Influences team to get the job done.
  • Modify new product recipes and ingredient selection while taking note of nutrition, shelf life, and regulations.
  • Work alongside Nutrition & Compliance to ensure meal designs are within nutritional targets.
  • Adhere to customer requests and specifications. Design meals based on market needs.
  • Have a key role in the procurement process of new items.
  • May complete a variety of routine office tasks that may include typing, preparing reports, completing research, track information and KPI’s, prepare or update excel spreadsheets, copying, scanning, etc.
  • When necessary this role will support other business streams in the same manner.
  • Performs other duties as needed

Preferred Exsperience & Education 

  • 5+ years of experience in food development, professional kitchen, or food manufacturing facility.
  • A degree in Culinary Arts, Food Science, Food Manufacturing, or a related field is preferred.
  • Minimum 2-3 years of experience acting in a Product Development Culinary Chef position. Advanced education or related degree in culinary arts, nutrition, food safety, or related education is preferred.

Preferred Knowledge & Skills 

  • Solid knowledge of the work associated with creating new products, documentation & validation.
  • A self-starter who can accomplish the work and meet multiple targets in different workstreams.
  • Able to work a flexible schedule to ensure efficient work completion when necessary.
  • Ability to set priorities and problem-solve, while working under pressure and in a fast-paced environment.
  • Excellent communication skills, a professional demeanor and interpersonal relationship skills.
  • Critical Thinking to determine root cause findings, take corrective actions, and problem-solving skills.
  • Intermediate computer skills: Microsoft Word, Excel, and Outlook
  • High sense of urgency, attention to detail, and the ability to work independently fast-paced environment.
  • Strong familiarity with auditing methods and processes, formal audit training/certification is desirable.
  • Strong problem-solving skills including root cause identification and resolution.
  • Keen eye for quality; detail-oriented, with strong culinary and analytical skills.
  • Strong verbal and written communication skills.
  • Ability to demonstrate excellent judgment, delegate work, and escalate issues as needed
  • Familiarity with HACCP and FSMA compliance.
  • Experience working with school nutrition and the NSLP & CACFP programs
  • Knowledge and experience with Quality Management Systems.
  • Experience working with FDA and USDA regulations, compliance, and commercialization requirements.
  • Certification and training in HACCP, Food Handling/ ServSafe, Culinary Arts, helpful
