Position Summary

T
he Manager of Culinary Quality & Compliance is responsible for the oversight of food quality and brand integrity for all culinary center operations. At its core, this position will ensure maximum food quality & consistency while ensuring that the components are in full compliance of regulatory standards, company standards, and client specifications. The role will be responsible for the development and upkeep of quality assurance systems and programs to assure product integrity, promoting healthy, compliant meals while maintaining rigorous documentation. The focus will be on the transfer of knowledge between PD & Ops. Top-level topics include quality, costs, and the high standard of food safety with each product. Responsible for conducting recipe testing, new item development and will identify areas of improvement and implement actionable plans to correct areas of noncompliance or improve individual products. This position will work with cross-functional teams to implement recipe and food production, packaging, safety, and quality programs in compliance with corporate policies and regulatory requirements. - If this is you, apply with us today!

Major Duties and Responsibilities

Responsible for supporting the maintenance of brand integrity and supporting scale-up and launch of healthy food choices. Maintain a working understanding of concepts moving through the development stream. Follows all health and safety standards, GMP’s, food safety, visual quality, and PPE requirements. Sets priorities and gives direction based upon goals and meets KPI targets for the department.
  • Create & maintain training docs to support understanding of Meal Assembly Cards & Recipe Cards.
  • Create and maintain Culinary Center Capabilities List.
  • Provide PD guidance on meal questions from Production Managers as needed.
  • Troubleshoot Operational Issues from Ops.
  • Conduct training for kitchen and pack out teams as needed for new meals or recipes.
  • Lead check-in meetings with Ops teams to provide PD updates on meal design, new specs, recipes, discuss operational wins and troubleshoot issues.
  • Identify, capture and share best practices throughout the culinary centers.
  • Provide guidance to ensure proper development for all foods from concept thru commercialization to include formulation, reformulation, translating PD recipes into SOPs, setting up procedures and guidelines for scale-up and mass production efficiencies.
  • Develop recipes, workflows, and SOPs to facilitate implementation of our products introduced into school accounts and other environments serviced. Serve as a point of knowledge about customers culinary needs, requirements.
  • Develop internal incident, investigation, and reporting standards with clear processes for follow-up.
  • Ensure the highest quality standards and good business relations are maintained with customers and governing agency representatives.
  • Actively coach, train and develop team members to build confidence, implement process control methods, and deliver KPI results.
  • Maintain records of research and development activities, to include but not limited to accurate recipe formulations, procedures, temping, yield data and production notes.
  • Collaborate with operational personnel to maximum handover and transition efficiency.
  • Understands KPI's, department targets, and the root cause of poor performance. Implement corrective actions to drive results. Regularly reports on progress against objectives.
  • Work with production teams to ensure launch product matches R&D specifications.
  • Support the transition from benchtop to a production environment by documenting standards and specifications for recipes.
  • Attend first production runs for all new products.
  • Conduct monthly audits across entire product range and identify opportunities to continuously improve our products as Mosaic grows.
  • Implement changes to drive improvement (from raw materials to production process)
  • Carry out on-site qualitative and quantitative Kid Testing on new and existing meals and concepts.
  • Provide R&D support as required to support the goals of the department and the organization.
Preferred Qualifications
  • Minimum 3 years of experience actively managing a fresh food program in a fast-paced food production environment
  • Advanced education or related degree in Food Science, food-related technology, safety or management is preferred.
  • Detail-oriented and strong problem-solving skills
  • Strong communication and analytical skills; must be proficient in Google Suite
  • Effective organizational skills; Able to manage priorities and complexities according to urgency.
  • Ability to effectively communicate and respond to the concerns of managers, stakeholders, and regulatory agencies
  • 5+ years of experience in food development, professional kitchen, or food manufacturing facility.
  • Degree in Culinary Arts, Food Science, Food Manufacturing, or related field is preferred.
  • Minimum 2-3 years of experience acting in a Product Development Culinary Chef position.
  • Advanced education or related degree in culinary arts, nutrition, food safety, or a related preferred.

  • Critical Thinking to determine root cause findings, take corrective actions, and problem-solving skills.
  • Intermediate computer skills: Microsoft Word, Excel, and Outlook
  • High sense of urgency, attention to detail & the ability to work independently in a fast-paced environment.
  • Strong problem-solving skills including root cause identification and resolution.
  • Keen eye for quality; detail-oriented, with strong culinary and analytical skills.
  • Ability to demonstrate excellent judgment, delegate work and escalate issues as needed.
  • Familiarity with HACCP and FSMA compliance.
  • Experience working with C-Store, GnG, Deli, Senior Nutrition, CACFP
  • Knowledge and experience with Quality Management Systems.
  • Experience working with FDA and USDA regulations, compliance, and commercialization requirements.
  • Certification and training in HACCP, Food Handling/ ServSafe, Culinary Arts, helpful.
