Position Summary

As an Executive Chef, you will be responsible for overseeing the entire culinary division including all food production for all outlets, executive club lounge, banquet functions and stewarding.

Job Responsibilities:

  • Plan / develop menus, food purchase specifications, and recipes. Directly supervise all production, pastry and stewarding staff members
  • Maintain highest professional food quality and sanitation standards at all times
  • Responsible for the hygiene and proper sanitation of working areas for storage, preparation and serving of foods in the hotel in compliance with all relevant NEA legislations
  • Plan menus for all food service locations considering customer base, popularity of various dishes, holidays, costs, and a wide variety of other factors
  • Develops and tests recipes and techniques for food preparation and presentation which help to ensure consistent high quality and to minimize food costs; exercises portion control over all items served and assists in establishing menu selling prices
  • Prepares necessary data for the budget in area of responsibility; projects annual food and labor costs and monitors actual financial results; takes corrective action where necessary to help ensure that financial goals are met

Job Requirements:

  • Certification in Culinary Skills
  • Minimum 3 to 4 years of experience as Executive Chef
  • Creativity and extensive knowledge of food products, modern trends and techniques
  • Strong attention to details
  • Strong leadership and people management skills
