SUMMARY:  Responsible for the management of all aspects of buffet, QSR and bar functions, in accordance with company standards. Directs, implements and maintains a service and management philosophy which serves as a guide to respective staff.

 

ESSENTIAL JOB FUNCTIONS: Include the following. Other job related duties may be assigned.

  • Ensures compliance with external financial reporting requirements, policies and procedures consistent with IRGC regulations.
  • Maintain complete knowledge and strictly abide by state liquor regulations, particularly those prohibiting service to minors and intoxicated persons.
  • Maintain complete knowledge of:
    • All liquor brands, beers and non-alcoholic selections available in outlets.
    • All menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
    • Daily menu specials, 86'd items.
    • O.S. and manual system procedures.
    • Scheduled in-house group activities, locations and times.
    • Correct maintenance and use of equipment.
    • All department policies/service procedures.
  • Check storage areas for proper supplies, organization and cleanliness. Instruct designated personnel to rectify any cleanliness/organization deficiencies.
  • Meet with Kitchen team daily to review specials and 86'd items. Ensure that staff is aware of such.
  • Prepare weekly work schedules in accordance with staffing guidelines. Adjust schedules throughout the week to meet the business demands.
  • Ensure employees report to work as scheduled. Take responsibility for covering the shifts of absent employees—whether personally or delegated. Document any late or absent employees
  • Coordinate breaks for staff.
  • Assign work and side duties to staff in accordance with departmental procedures.
  • Communicate additions or changes to the assignments as they arise throughout the shift. Identify situations which compromise the department's standards and delegate these tasks.
  • Monitor the preparation of station assignments, ensuring compliance to departmental perspectives.
  • Conduct pre-shift meetings with staff and review all information pertinent to the day's business.
  • Inspect grooming and attire of staff; rectify any deficiencies.
  • Constantly monitor staff performance in all phases of service and job functions, ensuring that all procedures are carried out to departmental standards; rectify any deficiencies with respective personnel.
  • Inspect all aspects of the outlets environment ensuring compliance with standards of cleanliness and order. Direct respective personnel to rectify deficiencies.
  • Anticipate heavy business times and organize procedures to handle extended waiting lines.
  • Monitor and handle guest complaints ensuring guest satisfaction.
  • Assist restaurant staff with their job functions to ensure optimum service to guests.
  • Access all functions of the P.O.S. system in accordance to specifications. Restock journal tape and change ribbons as needed.
  • Provide feedback to staff on their performance. Handle disciplinary problems and counsel employees according to hotel standards.
  • Foster and promote a cooperative working climate, maximizing productivity and employee morale.
  • Respond to all pages via cell phone promptly.
  • Prepare and submit payroll.
  • Document pertinent information in department log book.
  • Complete all paperwork and closing duties in accordance with departmental standards.
  • Review status of assignments and any follow-up action with on-coming supervisor.
  • Ensures safe working environment.
  • Works with other departments for all food outlets and venues.
  • Complete and direct scheduled inventories.
  • Interview outlet applicants.
  • Complete departmental filing.
  • Update P.O.S. menu changes.

 

SUPERVISORY RESPONSIBILITIES

Manages subordinate supervisors as well as bar, buffet and QSR employees.  Is responsible for the overall direction, coordination, and evaluation of these units.

 

Carries out supervisory responsibilities in accordance with the organization's perspectives and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems.

 

QUALIFICATIONS 

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.

All Employees must be knowledgeable to all Company policies and procedures, including fire and safety regulations.

 

EDUCATION and/or EXPERIENCE

College degree in hotel/restaurant management.  High School Diploma.  Five years minimum experience as a manager/supervisor within the food preparation and service arenas.

 

LANGUAGE SKILLS

Must be able to effectively communicate in English.

 

MATHEMATICAL SKILLS

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. 

 

COMPUTER SKILLS

Must have Microsoft Office, Word and Excel experience and basic computer skills.

 

LICENSES, CERTIFICATIONS OR REGISTRATIONS: Must be able to obtain and maintain an Iowa Gaming License.
