· Knowledge of the USDA Grading Standards and all USDA grading regulations as they pertain to beef grading · Ensuring the proper presentation of beef carcasses to USDA graders, by monitoring the chill, ribbing/sawing, and transfer of beef carcasses · The ability to apply the USDA standards to obtain the highest grade on beef carcasses that are presented for grading · Familiarity with quality grading, yield grading · Knowledge of the USDA certification process · Knowledge of programs that are selected for fabrication purposes · Working with the USDA graders to ensure that the highest value will be applied to each carcass · Code each carcass so that it can be separated for all fabrication breaks and orders · Look at each carcass for any defects on the cattle that were caused by the producer or during the harvesting process · Understanding of the E+V Camera operating system as it pertains to grading and the specific orders that it was designed for · Supervise a crew of hourly workforce team members, as well as management support team members · Correlating grading/marbling calls with other supervisors QUALIFICATIONS: · Minimum of High School diploma or GED equivalent · College Degree preferred with agriculture emphasis · Previous grading/technical/cooler supervisor experience preferred · Ability to read and comprehend USDA regulations · Performing general mathematical calculations required · Thorough comprehension of beef processing · Professional demeanor and the ability to work as a Team · Excellent communication skills EOE/Vet/Disabled |
