Hewing Hotel and Tullibee Restaurant is currently seeking an F&B Manager to join how highly devoted, creative and fun F&B Management team.  This position will assist with training and scheduling of staff, guest inquiries, inventory, and generally overseeing the F&B department.

This position will work closely and alongside the Director of F&B in assisting with the overall operation and flow of the bar, lounge, restaurant, in-room dining and banquet events.

The Hewing takes a sustainable approach to food and beverage - sourcing from and collaborating with regional farmers and purveyors, working with local breweries, coffee roasters and spirit makers, and connecting the staff and guest with the source as much as possible. The menu is heavily driven by seasonality.

JOB REQUIREMENTS
  • Develops and maintains an inviting environment, with superior associates, dedicated to an attentive, distinctive food and beverage experience
  • Hires, trains, supervises, disciplines, and motivates associates
  • Controls/maximizes seating of the restaurant/bar while maintaining high quality service
  • Controls usage of all food and beverage items and appropriate usage of equipment, tools and service equipment
  • Prepares associates schedules which allow for appropriate service while controlling labor costs and overtime
  • Consistently comes up with product and service improvements as well as ways to generate new business
  • Forecasts covers and revenues and then schedules associates accordingly
  • Prepares daily and weekly payroll as required by the Director of Finance
  • Uses cash handling procedures to accurately charge customers, creates forecast and revenue reports
  • Thorough understanding of all food and beverage items offered, including ingredients, methods of preparation and proper service. Expert knowledge of wines and spirits, beer and non-alcoholic beverages.
  • Complete and conducts performance evaluations for all associates
  • Maintains a daily log for communication
  • Handles all inventories directly involved with the operation of the restaurant
  • Thorough understanding of the computer system in ringing, printing and closing checks as well as shift reports
  • Empowered and empowers associates to intuitively serve each guest, associate, visitor or client
  • Detail orientated
  • Available to work a flexible schedule to include weekends and holidays
  • All other responsibilities assigned by management
ADDITIONAL REQUIREMENTS
  • Excellent reading, writing and oral proficiency of the English language
  • College degree, preferable in hotel and restaurant management
  • 2 years of food and beverage management experience
  • Thorough understanding of excellent service, labor control, cost of goods, maintenance, merchandising and accounting
  • Computer literate, POS savvy, reservation system knowledge
  • Outstanding verbal and multi-tasking skills
  • Excellent knowledge of food, wine and cocktails and local food and beverage trends and vendors
  • Ability to obtain and/or maintain Alcohol Awareness certification, Food Handlers Certification
