Responsibilities

  • Work on mostly Frozen Dumpling Products and will be in charge of:
    • Product Categories such as Frozen dumpling, Frozen Snack & Appetizer, Asian Snack, Asian Meal and Bakery categories
    • Process Design to set up preparation, vegetable cutting, meat cutting, forming, marinating and cooking process such as steaming, frying, oven cook etc.
  • Develop products from concepts formed at ideation sessions and follow standardized commercialization set-up procedures; execute projects according to business plan timelines
  • Improve current products with regard to both cost and quality; submit creative ideas for accomplishing these types of objectives
  • Communicate with vendors and suppliers as needed, especially sourcing new ingredients and researching MOQs, specifications, pricing and building relationships
  • Prepare bench top prototypes and analyze using a variety of methods available in the R&D test kitchen
  • Work mainly on frozen dumpling and snack item with focus on Asian flavor profiles
  • Work in conjunction with Senior Researcher to develop innovative concepts and recipes
  • Assist in the development of new frozen food products from concept to commercialization within cost and nutritional guidelines
  • Project Management skills with the ability to complete tasks independently
  • Monitor current market trends via trade journals and competitor market trips to predict future focus
  • Prepare product specifications, set-up formulas and write technical reports and test run plans
  • Write production test reports and technical presentations and share with cross-functional team members
  • Perform consumer sensory testing and shelf-life studies for pre-launch products
  • Maintain a clean and Organize and maintain the product development lab and storage room
  • Independently conduct plant trials at various production facilities
  • Conducting cook prep design and validation of USDA products
  • Support the Sr. Researcher of US R&D POST in reporting out the US food products and market information and trends to CJ Foods R&D at the Korea Headquarters.

Qualifications

  • Bachelor’s Degree and 2 years of experience or Associate Degree with 4 years of direct experience
  • Strong foundation of fundamental science, math & technical knowledge (food science, chemistry, nutrition, microbiology, etc.) with Bachelor’s degree in Food Science or related field and 2-4yrs industry experience (R&D preferred)
  • R&D experience in the food industry and Frozen Snack & Appetizer product development experience strongly preferred
  • R&D experience in the food industry and culinary background strongly preferred
  • Culinary experience is highly desired, training/certification or degree preferred
  • Factory scale-up experience preferred; process engineering background ideal
  • Strong understanding of product formulation, ingredient pairings and translating winning concepts into successful, cost-effective, clean label products
  • Demonstrated knowledge of ingredient functionality, product evaluation, health and nutrition, food manufacturing processes, microbiology, quality assurance and market research principles
  • Excellent communication, writing and interpersonal skills with strong analytical and problem-solving; highly organized with ability to be self-directed, meet deadlines and shift focus quickly and as often as necessary in a less-structured environment
  • Excellent communication skills, strong analytical and problem-solving skills, advanced knowledge of food science, computer skills that include Word, Excel & PowerPoint
  • Driving a rental automobile as needed; walking, standing or sitting for extended periods of time; ability to lift up to 40 lbs. on an occasional basis; exposure to manufacturing environments that may include loud noise, heat, cold, wet and slippery conditions
  • Bi-lingual English/Korean is a plus
