Aparium Hotel Group is looking for a VP of Food & Beverage to join our corporate team in Chicago.

Aparium Hotel Group is an owner, developer, and operator of high-quality independent hotels across the United States. The company was founded in 2011 by the former developers of the Elysian Hotel Chicago and their operating partners.

We currently operate and/or own hotels in Milwaukee, WI (Iron Horse Hotel), La Crosse, WI (Charmant Hotel), Covington, KY (Hotel Covington), New Orleans, LA (Pontchartrain Hotel), Memphis, TN (Madison Hotel), Omaha, NE (Hotel Deco XV), and Minneapolis (Hewing Hotel).  We have several hotels under development with locations in Detroit, Michigan; Kansas City, Missouri; Montclair, New Jersey: Des Moines, Iowa Tampa, Florida and Tempe, Arizona. Our pipeline for potential hotels continues to grow and expand in to underserved cities across the country.

Position Summary:

The VP of Food & Beverage develops and supports the Food and Beverage strategy for each property to align with our company pillars of translocal hospitality, intuitive service and collaborative culture.  The Corporate Director of Food & Beverage will provide hands on support to all properties by leading, coaching, and training the Food & Beverage front-of-house teams.  This position works collaboratively with the Culinary teams to ensure a seamless Food & Beverage experience.

 

Job Description:

LEADERSHIP

  • Provide strategic and tactical direction to all aspects of the Food & Beverage discipline including restaurants, bars, banquets, in room dining, private bar and amenities
  • Establish targets, key performance indicators, hours of operation, policies, and procedures for all Food & Beverage outlets
  • Participate in weekly F&B calls with each property Department Head to communicate standards and provide coaching and support
  • Develop partnerships and collaborate with outside vendors and consultants crucial to promoting corporate initiatives
  • Collaborate with the Culinary Director to ensure FOH and BOH build a good working rapport. Instill this culture in the teams to build that rapport at the property level.  
  • Create a culture of a passion for food and beverage, excellent service, viable work/life balance and positive reinforcement is utilized for F&B team
  • Instill the core pillars of Aparium through all stages of F&B development by maintaining and managing the services and reputation of the properties and company standards
  • Leads the F&B programming for on boarding for new properties and acquisitions within Aparium’s culture

 

FINANCIAL

  • Identify opportunities to ensure food and beverage revenues and profits
  • Help properties achieve budgeted food sales, beverage sales, labor costs and profitability with core mandates and leveraged pricing, cost control initiatives and strategic planning
  • Provide timely analysis of Food & Beverage prices in relation to competition & teaches the local teams to do this on their own
  • Participate and provide input towards F&B Marketing activities for revenue and PR purposes

 

OPENINGS

  • Hire talented Food & Beverage teams and develop associates for growth and success
  • Manage the pre-opening process for new hotels, including the Critical Path and Training Plans for all restaurants, bars, in room dining, private bar and banquets in collaboration with the hotel team
  • Collaborate with the owner’s vision, culinary department and Aparium regarding the look and feel of all F&B outlets
  • Oversee the tabletop, menu, small wares and equipment purchasing and pars for opening properties, acquisitions and renovations

 

PERFORMANCE STANDARDS

  • Work hands on with Food & Beverage front of house teams at each of our owned and operated hotels – if there is turnover, assisting until the position has been filled
  • Be an integral part of conversations regarding associate selection, hiring, development and corrective action
  • Responsible for manager training and development and be a resource for associate functional training in collaboration with property Director of F&B and GM
  • Audit any deficiencies in equipment and facilities, work towards getting items fixed, refunded & improved
  • Ensure that company standards test are being completed, meetings are attended and appropriate processes are being followed as outlined in the MRG and ARGs
  • Assist in menu engineering and pricing with Executive Culinary Director as well as establish seasonal calendar for menu changes
  • Develop and maintain all Food & Beverage Outlet and Events ARGs
  • Manage and develop department standards, hold teams accountable to the service expectations communicated and oversee opportunities as needed
  • Minimize number of customer complaints and respond accordingly if it cannot be handled on a property level through appropriates standards and service training
  • Create quality controls to measure excellence and performance within the Aparium brand standards
  • Find innovative ways to stand out in the market, create more effective processes, find better solutions and meet new or emerging trends including using new or existing tools and systems

  • Strong organizational skills; must be able to execute on multiple projects simultaneously with minimum supervision
  • Highly motivated, self-starter
  • Must possess strong analytical, financial and quantitative skills with a high level of attention to detail
  • Able to work in a very past paced / high stress environment managing multiple projects under thigh deadliness

 

Education:

  • Degree and/or applicable industry expertise

Experience:

  • Ten or more years of experience in Food & Beverage management preferred
  • At least five years of experience in a leadership position
  • Reading, writing and oral proficiency in the English language required
  • Proficiency of Microsoft Word, Excel, PowerPoint and Outlook required
