Job Summary:

Actively participates in and supervises all cooking operations. Hires, trains and supervises all food preparation associates and utility associates. Plans meals and assists the Manager of Food and Beverage Services with various assignments, ex: menu pricing, menu development, service coordination. Develops and implements systems to monitor and control all operating costs associated with the area supervised.

Special Qualifications, Education or Licenses:

1.Ideal candidate will have 5 + years in a Sous Chef role in a high volume Restaurant/Hotel,    

   Sports and Entertainment atmosphere.
2. Culinary School graduate and hotel experience highly desirable.
3. Sanitation Certification

Job Tasks:
1. Works with Executive Chef on administrative functions pertaining to forecasting, payroll, scheduling

     and recruiting.
2. Organizes an efficient flow of production and maintain adequate staffing.
3. Set-up a control system to assure quality and portion consistency.
4. Establish daily supervision, delegate authority to subordinate chefs, such as Garde Manger and

    Banquet Chef.
5. Develop food presentation and eye appeal of each plate, inspire Food Preparation Associates by

     personal interest and professional challenge.
6. Control food costs and proper forecasting regarding production as well as requisitioning, based on

     abstracts and house count.
7. Maintain good reliable staff. Motivate and promote personnel with potential.
8. Participate with the Director of Food & Beverage Services in the creative writing of menus for better

9. Implement and influence corporate policies and procedures pertaining to purchasing and recipes.
10. Thinks positively and is accessible to all associates.
11. Maintain the highest state of cleanliness in food preparation areas and ensure sanitation levels meet

       or exceed city code requirements.
12. Responsible for safe utilization of all food production equipment. Communicates repair and

       maintenance needs as required.
13. Maintain a pleasant and courteous attitude, meets customers as required
