Aparium Hotel Group is looking for an Executive Chef to join our team for the future opening in The MC Hotel in Montclair, New Jersey. Montclair gets a premium, full-service hotel for the first time since 1938.

Working with Marriott’s Autograph Collection, Aparium is helping bring an authentic experience to the heart of Montclair, New Jersey for the first time in decades. The $38 million dollar, 150 room, ground-up development is scheduled to open in 2018. Included in the downtown hotel’s plans are a farm-to-table restaurant, rooftop bar with unparalleled views of Manhattan, curated lobby market, and six-story parking garage. Additionally plans call for 13,000 square feet of chic event space and meeting rooms, including a state-of-the-art conference center.

Aparium Hotel Group is an owner, developer, and operator of high-quality independent hotels across the United States. The company was founded in 2011 by the former developers of the Elysian Hotel Chicago and their operating partners.

We currently operate and/or own hotels in Milwaukee, WI (Iron Horse Hotel), La Crosse, WI (Charmant Hotel), Covington, KY (Hotel Covington), New Orleans, LA (Pontchartrain Hotel), Memphis, TN (Madison Hotel), Omaha, NE (Hotel Deco XV), and Minneapolis, MN (Hewing Hotel).  We have several hotels under development with locations in Detroit, Michigan; Kansas City, Kansas; Des Moines, Iowa Tampa, Florida and Tempe, Arizona. Our pipeline for potential hotels continues to grow and expand in to underserved cities across the country.

OB REQUIREMENTS

  • Possess a strong background/knowledge of culinary operations
  • Long-range strategic planning for all outlets
  • Identify service issues and take action to correct them
  • Effectively plan and develop menus for the hotel considering factors such as product availability, food and service cost, marketing conditions and business volume
  • Assign prices for daily menus that result in profit
  • Ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration
  • Focus on creative cost control and revenue generation solutions to maximize profit
  • Ensure sanitation standards that are set forth by the hotel, local, state and federal regulations are in compliance
  • Create proper purchasing specifications and coordinate and execute a monthly inventory
  • Monitor and review operating standards
  • Constantly recommend service and product improvement to better the operation

 ADDITIONAL REQUIREMENTS

  • Good reading, writing and oral proficiency in the English language
  • College degree preferable
  • 5-7 years previous experience in multiple culinary/food and beverage department head positions
  • Thorough understanding of excellent service, labor control, maintenance, merchandising and accounting
  • Computer literate
  • Lead by example and foster mentoring relationships
  • Outstanding verbal and multi-tasking skills
  • Excellent knowledge of food, wine and cocktails
